- 1 Heat the olive oil in a non-stick skillet over medium heat, then sauté the chopped onion until soft and fragrant, about 2-3 minutes.
- 2 Add the green bell pepper and sauté for another 2 minutes until slightly softened.
- 3 Add the diced tomatoes and stir well. Cook, stirring occasionally, for 5-7 minutes until the tomatoes soften and release their juices; let the liquid reduce slightly.
