- 2 chicken eggs
- 1 carrot, cut into matchsticks and briefly boiled
- 1/2 cucumber, seeds removed, cut lengthwise
- 2 chicken sausage, lightly fried, sliced lengthwise
- 1 tsp cooking oil, for greasing
- to taste low-sugar sweet soy sauce (kecap manis, optional for dipping)

- 1 Mix the warm rice with the apple cider vinegar, sugar, and salt. Stir gently until well combined, then let it cool to room temperature so the rice isn't overly sticky when rolled.
- 2 Beat the eggs lightly, add a pinch of salt, then cook into a thin omelet in a flat pan with a little oil. Once cooked, slice into strips the same length as the nori.
- 3 Prepare a sushi mat or a clean plastic sheet, and place a sheet of nori shiny-side down.
- 4 Take enough rice and spread it thinly over the nori, leaving about 2 cm (¾ inch) bare at the top edge so it's easy to seal.
- 5 Arrange the egg omelet, carrot, cucumber, and chicken sausage in a row along the bottom edge of the rice.
- 6 Roll it up gently using the sushi mat, pressing firmly so the filling doesn't fall apart. Seal the edge of the nori with a little water.
- 7 Let the roll rest for a moment, then slice it with a sharp knife dipped in water for neat, clean cuts.
- 8 Arrange the sushi roll slices in a lunchbox and serve with low-sugar sweet soy sauce (kecap manis) for dipping, if desired.
