👩🍳 Instructions
- 1 Finely grate the cassava, then squeeze out the liquid
- 2 Mix the grated cassava with granulated sugar, tapioca flour, and salt
- 3 Stir until well combined and the mixture can be shaped
- 4 Take a golf ball-sized portion of the mixture and flatten it
- 5 Place 1 tsp of chopped palm sugar in the center
- 6 Shape into a ball, sealing tightly so the palm sugar is completely covered
- 7 Heat plenty of oil over medium-low heat
- 8 Fry the misro slowly until golden brown and cooked through evenly
- 9 Don't use high heat, so the inside cooks through as well
- 10 Remove and drain
- 11 Serve warm — be careful, the palm sugar inside is very hot!
💡 Tips
• The cassava must be squeezed well so it isn't too wet and the dough is easy to shape
• Medium-low heat is important so the cassava cooks all the way through
• Be careful on the first bite — the melted palm sugar inside can be extremely hot!
