Misro (amis di jero — sweet on the inside) has a crispy outside made from grated cassava, with melted palm sugar oozing inside. A classic Sundanese fried snack that's simple but incredibly delicious!

  • 500g grated cassava, squeezed to remove excess liquid
  • 50g granulated sugar
  • 50g tapioca flour
  • 1/4 tsp salt
  • Filling: 100g palm sugar (gula merah), finely chopped or shaved
  • Oil for frying (deep fry)

👩‍🍳 Instructions

  1. 1 Finely grate the cassava, then squeeze out the liquid
  2. 2 Mix the grated cassava with granulated sugar, tapioca flour, and salt
  3. 3 Stir until well combined and the mixture can be shaped
  4. 4 Take a golf ball-sized portion of the mixture and flatten it
  5. 5 Place 1 tsp of chopped palm sugar in the center
  6. 6 Shape into a ball, sealing tightly so the palm sugar is completely covered
  7. 7 Heat plenty of oil over medium-low heat
  8. 8 Fry the misro slowly until golden brown and cooked through evenly
  9. 9 Don't use high heat, so the inside cooks through as well
  10. 10 Remove and drain
  11. 11 Serve warm — be careful, the palm sugar inside is very hot!

💡 Tips

• The cassava must be squeezed well so it isn't too wet and the dough is easy to shape

• Medium-low heat is important so the cassava cooks all the way through

• Be careful on the first bite — the melted palm sugar inside can be extremely hot!
