  • 400g basmati rice, soaked for 30 minutes
  • 500g chicken pieces
  • 1 cup plain yogurt
  • 4 tbsp ghee (clarified butter) or butter
  • 2 large onions, thinly sliced
  • 4 clove garlic
  • 1 inch piece ginger
  • 2 chopped tomatoes
  • Spices: 2 tsp turmeric powder, 2 tsp chili powder, 1 tsp garam masala, 1 tsp ground coriander, salt
  • Whole spices: 4 cardamom pods, 3 cloves, 2 cinnamon sticks, 2 bay leaves
  • Saffron, to taste, dissolved in 3 tbsp warm milk
  • Fried shallots and raisins for garnish

👩‍🍳 Instructions

  1. 1 Blend the garlic and ginger into a paste
  2. 2 Marinate the chicken with yogurt, the ginger-garlic paste, and all the ground spices for at least 1 hour
  3. 3 Fry the sliced onions in ghee until golden brown and crispy; set some aside for garnish
  4. 4 Sauté the whole spices, add the tomatoes, and cook until softened
  5. 5 Add the marinated chicken and cook until halfway done
  6. 6 Boil the basmati rice with salted water and whole spices until about 70% cooked, then drain
  7. 7 Arrange the chicken at the bottom of the pot, then layer the rice on top
  8. 8 Sprinkle the fried onions, raisins, and saffron milk mixture on top
  9. 9 Cover the pot tightly and cook on low heat (dum method) for 25-30 minutes
  10. 10 Gently stir before serving

💡 Tips

• Marinate the chicken for at least 1 hour — the longer, the better (overnight in the fridge is best)

• The dum process (steaming in a tightly covered pot) is the secret to fragrant biryani

• Real saffron is expensive, but it makes the biryani's color and aroma so much more special
