- 3 plates cold cooked white rice
- 2 eggs
- 4 cloves garlic, crushed and minced
- 6 shallots, thinly sliced
- 3 bird's eye chilies, sliced (adjust to taste)
- 2 tbsp sweet soy sauce (kecap manis)
- 1 tbsp oyster sauce
- 1 tsp salt
- 1/2 tsp ground pepper
- 2 tbsp cooking oil
- Sliced scallions, to taste
- Kerupuk (Indonesian crackers) for serving

👩🍳 Instructions
- 1 Heat the oil, then sauté the shallots and garlic until fragrant and lightly browned
- 2 Add the bird's eye chilies and stir briefly
- 3 Push the seasoning mixture to the side of the pan, add the eggs, and scramble them
- 4 Add the white rice and mix well over high heat
- 5 Add the sweet soy sauce, oyster sauce, salt, and pepper
- 6 Keep stirring for 3-4 minutes until the rice is dry and the seasoning is evenly distributed
- 7 Sprinkle with scallions, stir briefly, then remove from heat
- 8 Serve with kerupuk (crackers) and sliced cucumber
💡 Tips
• Use rice that's been chilled overnight so the result isn't mushy
• Cook over high heat (wok hei) so the smoky aroma of the fried rice really comes through
