This fried rice is different from the usual because the eggs are mashed into spicy-sweet balado sauce, savory and soaked into every grain of rice. The flavor is rich thanks to the combination of sweet soy sauce, crispy fried shallots, and a touch of red chili that makes it addictive. Perfect as a quick breakfast dish or a practical dinner that gets your taste buds dancing.

  • 3 plates Cold cooked white rice (leftover from the night before)
  • 3 Chicken eggs
  • 5 pieces Curly red chilies
  • 5 pieces Red bird's eye chilies
  • 6 cloves Shallots
  • 3 cloves Garlic
  • 1 piece Red tomato
  • 4 tbsp Sweet soy sauce (kecap manis)
  • 1 tsp Salty soy sauce (kecap asin)
  • 1/2 tsp Salt
  • 1/2 tsp Granulated sugar
  • 1/4 tsp Ground black pepper
  • 5 tbsp Cooking oil
  • 3 tbsp Fried shallots
  • 2 stalks Green onion, thinly sliced
  • 1 piece Fresh cucumber, for serving
  • to taste Crackers (kerupuk), for serving

👩‍🍳 Instructions

  1. 1 Boil the eggs until fully cooked (about 10 minutes), peel, and set aside. While waiting, prepare the balado sauce ingredients: coarsely grind or briefly blend the curly red chilies, bird's eye chilies, shallots, garlic, and tomato.
  2. 2 Heat 3 tbsp of oil in a pan, sauté the ground balado spice paste until cooked, fragrant, and the color turns darker with the oil slightly separating. Season with a little salt and sugar.
  3. 3 Cut the boiled eggs in half, add them into the cooked balado sauce, and stir gently until the eggs are evenly coated with the sauce. Remove from heat and set aside along with the remaining balado sauce in the pan.
  4. 4 In the same pan, add the remaining 2 tbsp of oil. Add the cold white rice and stir-fry over medium-high heat so the rice doesn't clump.
  5. 5 Pour in the sweet soy sauce, salty soy sauce, salt, and ground pepper. Mix well until the rice is evenly browned and the seasoning is fully incorporated into every grain.
  6. 6 Return the balado eggs along with the remaining balado sauce into the rice, stirring gently so the eggs don't break apart while the seasoning blends with the rice.
  7. 7 Taste and adjust the salty-sweet balance if needed. Turn off the heat, then sprinkle with fried shallots and sliced green onion.
  8. 8 Serve the fried rice while warm with pieces of balado egg on top, accompanied by fresh cucumber slices and crackers on the side.

💡 Tips

• Use rice that has been chilled overnight in the refrigerator so its texture stays firm and doesn't turn mushy when fried.

• Don't stir the balado eggs into the rice for too long so they don't break apart and still look nice when served.

• If you like it spicier, add whole bird's eye chilies fried briefly as a topping on the rice.

• You can add shredded chicken or sliced meatballs if you want a more filling version.
