  • 75 grams salted jambal or peda fish, cut into small cubes
  • 2 chicken eggs
  • 1 tsp good-quality roasted shrimp paste (terasi)
  • 6 pieces curly red chilies
  • 8 pieces red bird's eye chilies (adjust to taste)
  • 6 shallots
  • 4 cloves garlic
  • 1 piece medium-sized ripe tomato
  • 1 handful Thai basil leaves
  • 2 tbsp sweet soy sauce (kecap manis)
  • 1/2 tsp salt
  • 1/2 tsp granulated sugar
  • 1/2 tsp chicken-flavored powdered broth (optional)
  • 5 tbsp cooking oil for sautéing and frying the salted fish
  • 2 tbsp fried shallots for garnish
  • 1 piece fresh cucumber, for serving

  1. 1 Prepare white rice that has been chilled in the refrigerator overnight so the texture stays firm and doesn't clump when fried. Fluff the rice briefly with a fork so the grains separate.
