These homemade chicken carrot nuggets are a practical solution for moms who want their kids to eat healthy, preservative-free lunches. They're soft on the inside, crispy on the outside, and have a bright color thanks to the grated carrots that make kids eat more eagerly. Perfect to fry up in the morning or stock in the freezer for a whole week's worth of lunchboxes.

  • 300 grams ground chicken
  • 1 medium piece, finely grated carrot
  • 3 cloves, minced garlic
  • 1/4 piece, finely chopped onion
  • 2 chicken eggs
  • 5 tbsp all-purpose flour
  • 3 tbsp cornstarch
  • 50 ml plain milk
  • 1 tsp salt
  • 1/2 tsp granulated sugar
  • 1/2 tsp ground pepper
  • 1 tsp chicken bouillon powder (halal)
  • 150 grams, for the outer coating breadcrumbs
  • to taste cooking oil

👩‍🍳 Instructions

  1. 1 Mix the ground chicken, grated carrot, minced garlic, and chopped onion together in a large bowl.
  2. 2 Add 1 egg, all-purpose flour, cornstarch, and milk. Stir well until the mixture is thoroughly combined.
  3. 3 Season with salt, sugar, pepper, and bouillon powder. Stir again until evenly mixed and the batter feels slightly sticky.
  4. 4 Prepare a square or rectangular heatproof pan and lightly grease it with oil. Pour in the batter and smooth out the surface with a spatula.
  5. 5 Steam the mixture for 25-30 minutes over medium heat. Check for doneness with a toothpick — if no batter sticks to it, it's fully cooked.
  6. 6 Remove and let the steamed mixture cool completely, at least 1 hour, or refrigerate for 30 minutes so it's easier to slice.
  7. 7 Cut the mixture into pieces however you like (squares, sticks, or your kids' favorite shapes).
  8. 8 Beat the remaining 1 egg. Dip each nugget piece into the beaten egg, then roll it in breadcrumbs until evenly coated.
  9. 9 Heat enough oil over medium heat. Fry the nuggets until golden and crispy, flipping so they cook evenly.
  10. 10 Remove and drain on paper towels. The nuggets are ready to serve warm or to store in the freezer for the next lunchbox.

💡 Tips

• After slicing, the raw nuggets can be coated with breadcrumbs right away and stored in the freezer in an airtight container — they'll keep for up to 2 weeks, ready to fry the next morning.

• For a healthier version, the nuggets can be baked in the oven at 350°F (180°C) for 15-20 minutes, or cooked in an air fryer at 350°F (180°C) for 10 minutes, flipping once halfway through.

• Add other vegetables like sweet corn kernels or finely chopped broccoli to make the lunchbox even more nutritious and varied.

• Make sure the mixture is completely cool before slicing so the nuggets keep a neat shape and don't fall apart when coated with breadcrumbs.
