Classic onde-onde wijen that's crispy outside, chewy inside! Glutinous rice balls coated in sesame seeds and fried to golden perfection, filled with a soft, sweet mung bean paste. A favorite fried treat for all ages, found everywhere from street stalls to restaurants.

- 250 g Dough: white glutinous rice flour
- 50 g all-purpose flour
- 100 g granulated sugar
- 200 ml warm water
- 1/4 tsp salt
- 150 g white sesame seeds
- 200 g Mung bean filling: peeled split mung beans, soaked for 2 hours
- 100 g granulated sugar
- 1/2 tsp salt
- 1 leaf pandan leaf
- 2 tbsp thick coconut milk
- Oil for frying (deep fry)

👩🍳 Instructions
- 1 Filling: Steam the soaked mung beans until very soft.
- 2 Puree together with the sugar, salt, coconut milk, and pandan leaf — you can use a blender or mash by hand.
- 3 Cook in a non-stick pan until the mixture is smooth and holds its shape.
- 4 Let cool, then roll into small balls and set aside.
- 5 Dough: Mix together the glutinous rice flour, all-purpose flour, sugar, and salt.
- 6 Pour in the warm water little by little, kneading until smooth and no longer sticky.
- 7 Take a piece of dough, flatten it, fill with a mung bean ball, then roll it back into a tight ball.
- 8 Dip into water, then roll in sesame seeds until the entire surface is coated.
- 9 Heat oil over medium-low heat.
- 10 Fry the onde-onde over low heat first, stirring gently so they puff up evenly.
- 11 Increase to medium heat and fry until golden and the sesame seeds are toasted.
- 12 Remove and drain.
💡 Tips
• Fry over low heat first, and make sure the onde-onde can float and turn freely in the oil so they puff up evenly.
• The mung bean filling must be cooked until truly smooth and dry so it doesn't turn watery inside.
• Press down lightly on the onde-onde near the end of frying to make sure they're cooked through.
