  • 200 grams all-purpose flour
  • 1.5 tbsp matcha powder
  • 3 tbsp granulated sugar
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 250 ml whole milk
  • 1 egg
  • 3 tbsp melted unsalted butter
  • 100 grams white chocolate (cut into small pieces)
  • to taste butter for greasing the pan
  • to taste honey or maple syrup for topping

👩‍🍳 Instructions

  1. 1 Sift the flour, matcha powder, baking powder, and salt into a large bowl. Stir well and set aside.
  2. 2 In a separate bowl, whisk the egg together with the sugar until slightly foamy, then add the milk and melted butter. Mix well.
  3. 3 Pour the wet mixture into the dry mixture little by little while gently stirring with a spatula. Mix only until combined—don't overmix, so the pancakes stay soft.
  4. 4 Let the batter rest for 10 minutes so the gluten relaxes and the pancakes puff up nicely when cooked.
  5. 5 Heat a nonstick flat pan over low heat and lightly grease it with butter.
  6. 6 Pour one ladle of batter onto the pan, then immediately sprinkle a few pieces of white chocolate on top before the surface dries.
  7. 7 Cook until small bubbles appear on the surface and the edges look set, about 2-3 minutes.
  8. 8 Carefully flip the pancake and cook the other side for 1-2 minutes until fully cooked and the chocolate begins to melt.
  9. 9 Remove from the pan, stack a few pancakes together, drizzle with honey or maple syrup, and serve warm.

💡 Tips

• Use good-quality matcha for a prettier green color and to avoid an overly bitter taste.

• Don't stir the batter for too long—mix just until combined so the pancakes stay tender.

• Cook over low heat so the inside cooks through fully without burning the outside.

• Save the leftover white chocolate to sprinkle on top of the pancakes when serving.
