- 1 Blend or mash the bananas until very smooth, like a puree
- 2 If using rolled oats: blend them first into oat flour, or add the rolled oats directly to the blender along with the bananas
- 3 Add all the ingredients: banana, oats, eggs, baking powder, cinnamon, vanilla, and salt
- 4 Blend or whisk until the batter is smooth and has a pancake-batter consistency
- 5 Heat a non-stick pan over low heat — no oil needed
- 6 Pour 3 tbsp of batter per pancake
- 7 Cook until the edges start to set and bubbles appear on the surface
- 8 Flip carefully and cook the other side for 1-2 minutes
- 9 Arrange on a plate, top with fresh fruit, drizzle with honey, and spoon on the yogurt
