  • 300 grams, thinly sliced against the grain beef tenderloin
  • 300 grams, cut into florets broccoli
  • 4 cloves, finely minced garlic
  • 1 inch piece, crushed then minced ginger
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp fish sauce
  • 1 tsp sesame oil
  • 2 tbsp olive oil or cooking oil
  • 100 ml beef broth or water
  • 1/2 tsp powdered erythritol or low-calorie sweetener (optional)
  • to taste salt
  • 1/2 tsp ground black pepper
  • 2 stalks, cut into 3 cm pieces green onion
  • 1 tsp, for garnish toasted sesame seeds

👩‍🍳 Instructions

  1. 1 Marinate the sliced beef with 1 tbsp soy sauce, a pinch of pepper, and 1 tsp olive oil. Let it sit for 10-15 minutes so the flavors soak in.
  2. 2 Bring water to a boil in a small pot, add the broccoli, and blanch for just 1-2 minutes so it stays bright green and crisp-tender. Drain and set aside.
  3. 3 Heat the remaining olive oil in a skillet or wok over high heat. Stir-fry the minced garlic and ginger until fragrant, about 30 seconds.
  4. 4 Add the marinated beef and cook while stirring quickly for 2-3 minutes until the beef changes color and is cooked through—don't overcook, or it will become tough.
  5. 5 Pour in the beef broth, the remaining soy sauce, fish sauce, and low-calorie sweetener if using. Stir well and cook until the sauce thickens slightly, about 2 minutes.
  6. 6 Add the blanched broccoli and toss with the sauce for 1-2 minutes so it's evenly coated with flavor.
  7. 7 Add the green onion and sesame oil, stir briefly, then turn off the heat. Adjust the seasoning with salt and pepper to taste.
  8. 8 Transfer to a serving plate and sprinkle toasted sesame seeds on top. Serve warm while the broccoli is still crisp.

💡 Tips

• Slice the beef against the grain so it turns out more tender when cooked.

• Don't overcook the broccoli—just blanch it briefly so it stays crisp and retains its nutrients.

• Use high heat when stir-frying the beef so it cooks quickly without releasing too much liquid.

• You can substitute the beef with chicken fillet or shrimp for variety; just adjust the cooking time accordingly.
