  • 200 ml whole milk
  • 70 grams granulated sugar
  • 1 tsp plain agar-agar powder (unflavored, uncolored)
  • 10 grams powdered gelatin (halal/beef-derived)
  • 3 tbsp boiled water, to dissolve the gelatin
  • 1 tsp vanilla paste
  • 250 grams fresh or frozen blueberries
  • 50 grams granulated sugar, for the sauce
  • 1 tbsp lemon juice
  • 3 tbsp water
  • to taste mint leaves, for garnish

  1. 1 Dissolve the powdered gelatin in 3 tbsp of boiled water, stir well, and let it sit for a moment until it swells up like a gel.
  2. 2 In a saucepan, combine the whipping cream, whole milk, granulated sugar, and agar-agar powder. Stir well before heating so the agar-agar doesn't turn lumpy.
  3. 3 Heat the cream mixture over low-medium heat, stirring continuously until the sugar dissolves and the mixture becomes warm; do not let it come to a boil and bubble over.
  4. 4 Add the dissolved gelatin into the hot cream mixture, stirring quickly until fully combined with no lumps.
