- 250 grams Penne
- 4 Fresh red tomatoes, finely chopped
- 3 tbsp Bottled tomato sauce
- 200 ml Cooking cream
- 1/2 Onion, finely chopped
- 3 clove Garlic, finely chopped
- 2 tbsp Unsalted butter
- 1 tbsp Olive oil
- 4 tbsp Grated Parmesan cheese
- 1/2 tsp Granulated sugar
- 1 tsp Salt
- 1/2 tsp Ground black pepper
- to taste Fresh basil leaves, for garnish

- 1 Boil the penne in lightly salted boiling water according to the package instructions until al dente. Reserve 1/2 cup of the pasta cooking water before draining.
- 2 Heat the butter and olive oil in a large skillet over medium heat. Sauté the garlic and onion until fragrant and softened.
- 3 Add the chopped tomatoes and cook, stirring occasionally, until the tomatoes soften and release their juices, about 5-7 minutes.
- 4 Add the bottled tomato sauce, sugar, salt, and pepper. Stir well and simmer over low heat for 3 minutes to let the flavors meld.
- 5 Pour in the cooking cream a little at a time, stirring constantly so the sauce blends evenly and turns a pretty pink color. Simmer over low heat until slightly thickened.
- 6 Add the drained penne to the sauce and stir to combine. If the sauce is too thick, add a little of the reserved pasta water at a time.
- 7 Sprinkle in the grated Parmesan cheese and stir briefly until melted and fully incorporated into the sauce.
- 8 Remove from heat and serve warm, garnished with fresh basil leaves and the remaining Parmesan on top.

• Use fully ripe tomatoes so their natural sweet-tangy flavor really comes through.
• Don't cook the cream over high heat as it can curdle — keep it on low heat and stir constantly.
• The pasta cooking water contains starch that helps the sauce come together and become smoother, so don't discard all of it.
• Add a little chili powder if you like a spicy version, like a penne arrabbiata rosa.
