The combination of soft tofu, chewy button mushrooms, and a blend of spices and basil wrapped in banana leaf creates an irresistible, fragrant aroma. • 1 egg Chicken egg
  • 2 handfuls Sweet basil leaves
  • 8 sheets, for wrapping Banana leaf
  • 6 Shallots
  • 4 cloves Garlic
  • 3 , toasted Candlenuts
  • 2 inch piece, lightly charred Turmeric
  • 3 pieces Large red chilies
  • 5 pieces, sliced (optional) Bird's eye chilies
  • 1 piece, diced Red tomato
  • 2 stalks, bruised Lemongrass
  • 3 leaves Bay leaves
  • 2 inch piece, bruised Galangal
  • 1.5 tsp Salt
  • 1 tsp Granulated sugar
  • 1 tsp Mushroom or chicken bouillon powder
  • 0.5 tsp Ground white pepper
  • 16 pieces, for securing Toothpicks or bamboo skewers

👩‍🍳 Instructions

  1. 1 Mash the tofu with a fork or pulse it briefly in a blender until it has a crumbly texture, then set it aside in a large bowl.
  2. 2 Make the spice paste by blending or grinding the shallots, garlic, candlenuts, turmeric, and large red chilies until smooth.
  3. 3 Combine the mashed tofu with the sliced button mushrooms, egg, spice paste, salt, sugar, bouillon powder, and pepper. Mix well until all the ingredients are thoroughly combined.
  4. 4 Add the diced tomato, sliced bird's eye chilies, and most of the basil leaves (save a little for garnish). Fold gently so the basil doesn't wilt.
  5. 5 Prepare a sheet of banana leaf and place a piece of bruised lemongrass, a bay leaf, and a piece of galangal at the bottom as an aromatic base.
  6. 6 Take 2-3 tablespoons of the tofu-mushroom mixture, place it on the banana leaf, and sprinkle a little fresh basil on top.
  7. 7 Wrap it neatly like a lontong (rice cake) parcel, then secure both ends with a toothpick or bamboo skewer so it doesn't open during steaming.
  8. 8 Repeat the wrapping process until all the mixture is used up; this usually makes 8 pepes parcels.
  9. 9 Heat a steamer, then steam the pepes parcels for 30-35 minutes over medium heat until cooked through and fragrant.
  10. 10 Remove the pepes parcels and let them cool slightly before opening. For a smokier aroma, you can briefly grill the parcels on a nonstick pan or over charcoal embers before serving.
  11. 11 Serve the warm pepes tahu jamur with steamed white rice and sambal terasi (shrimp paste chili sauce) as an accompaniment.

💡 Tips

• Choose firm tofu that isn't too watery so the pepes doesn't turn mushy when steamed.

• Don't overmix the basil into the mixture so it stays fresh-looking and keeps its aroma during steaming.

• For a more fragrant result, briefly grill the steamed pepes on a nonstick pan before serving.

• If you like it spicy, add whole bird's eye chilies inside the wrap before steaming so the heat blends in more evenly.
