👩🍳 Instructions
- 1 Peel the salted eggs and cut them into coarse pieces (don't chop too finely so the texture still comes through). Set aside.
- 2 Make the spice paste: grind the shallots, garlic, candlenuts, turmeric, and ginger until completely smooth.
- 3 Beat the chicken eggs in a large bowl, then mix in the spice paste, ground coriander, salt, and sugar. Stir until well combined.
- 4 Add the cut salted eggs, petai, and diced tomato into the seasoned egg mixture. Stir gently so the pieces don't break apart.
- 5 Wilt the banana leaves briefly over low heat so they become pliable and won't tear easily when wrapping.
- 6 Take one sheet of banana leaf, place a few basil leaves on it as a base, then spoon on some of the salted egg mixture.
- 7 Add sliced red chilies, whole bird's eye chilies, a piece of bay leaf, and lemongrass on top of the mixture.
- 8 Wrap it up neatly like a typical pepes, folding both ends and pinning them with a bamboo skewer so it doesn't open while steaming.
- 9 Heat a steamer with boiling water, arrange the pepes packets inside, and steam for 35-40 minutes until cooked through and the seasoning has absorbed.
- 10 Remove the pepes and serve them in their wrapping while still warm so the aroma of the banana leaf and spices stays fragrant. You can also briefly grill them on a nonstick pan for a smokier aroma.
💡 Tips
• Choose salted eggs with fully matured, oily yolks for the maximum savory flavor.
• Don't skip the step of wilting the banana leaves — this is important so the leaves don't tear when wrapping and to bring out that signature aroma when steamed.
• If you're not a fan of petai, you can substitute thinly sliced boiled jengkol (dogfruit) as an alternative.
• For a smokier, more savory aroma, briefly grill the cooked pepes packets on a nonstick pan or over charcoal embers before serving.
