👩🍳 Instructions
- 1 Peel the bananas, then slice each one lengthwise into two pieces, or flatten them slightly to your liking. Set aside.
- 2 Make the batter: in a bowl, mix the all-purpose flour, rice flour, sugar, salt, and vanilla powder. Gradually pour in the ice water while stirring until you get a thick but still pourable batter.
- 3 Make a separate crumble batter: mix the rice flour with water, stirring until it's thin, like a light crepe batter.
- 4 Heat the oil in a pan over medium heat. Make sure there's enough oil for the bananas to be fully submerged while frying.
- 5 Dip the bananas into the main batter until evenly coated.
- 6 Place the dipped bananas into the hot oil, then drizzle the crumble batter over the surface with a spoon so it forms crispy strands around the banana.
- 7 Fry until the bananas turn golden brown and the crumble looks crispy, flipping occasionally for even cooking. Remove and drain on an oil strainer.
- 8 Once slightly cooled, arrange the crispy fried bananas on a plate or in a to-go box, drizzle with honey, and sprinkle with shredded cheese if desired.
- 9 Package in a paper box or clear plastic container for sale; you can also add melted chocolate or sweetened condensed milk as a topping variation.
💡 Tips
• Use fully ripe bananas (yellow skin with a few black spots) so their natural sweetness really comes through.
• Make sure the oil is really hot before frying so the crumble puffs up right away instead of turning soggy.
• Don't flip the bananas too often while frying so the crumble doesn't fall off the surface.
• For selling, prepare toppings separately—like honey, chocolate, cheese, or sweetened condensed milk—so customers can choose their own favorite.
