👩🍳 Instructions
- 1 Preheat the oven to 200°C (400°F)
- 2 Cook the water, butter, and salt together until boiling
- 3 Turn off the heat, add all the flour at once, and stir quickly until the dough forms a ball and no longer sticks to the pot
- 4 Transfer to a bowl and let cool slightly for 5 minutes
- 5 Add the eggs one at a time, beating vigorously until the dough is smooth and glossy
- 6 Pipe or spoon small mounds of dough (about 3-4cm/1.5 inches in diameter) onto a baking sheet lined with parchment paper
- 7 Bake for 25 minutes until puffed and golden brown — DO NOT open the oven during the first 20 minutes
- 8 Let cool, then slice each puff in half horizontally
- 9 Fill with whipped cream
- 10 For the sauce: heat the cream, pour over chopped dark chocolate, stir until melted, then add butter
- 11 Arrange the profiteroles on a plate and drizzle with warm chocolate sauce
💡 Tips
• DO NOT open the oven during the first 20 minutes — the choux pastry may deflate
• Properly made choux dough should be smooth, glossy, and fall slowly off the spatula
• Eggs must be added one at a time so they mix in completely
• Profiteroles taste best served right after filling and drizzling with sauce
