👩🍳 Instructions
- 1 Blend the ripe avocado flesh together with the sweetened condensed milk and boiled water until smooth and soft, then set aside in a bowl.
- 2 For the chocolate layer: mix half of the agar-agar powder (about 3.5 grams) with 250 ml of liquid milk, the cocoa powder, 40 grams of granulated sugar, and 1/8 tsp of salt in a saucepan.
- 3 Cook the chocolate layer over medium heat while stirring continuously until it boils and starts bubbling lightly, about 5-7 minutes. Turn off the heat, add the chopped dark cooking chocolate, and stir until fully melted and the texture is smooth and thickened.
- 4 Pour the chocolate layer into serving glasses, filling about 1/3 of each glass, and let it set at room temperature for 15-20 minutes until the surface is firm (not sticky to the touch).
- 5 While waiting, cook the avocado layer: mix the remaining agar-agar powder, 250 ml of liquid milk, 40 grams of granulated sugar, and 1/8 tsp of salt in a separate saucepan. Cook over medium heat while stirring until it boils, about 5 minutes, then remove from heat.
- 6 Pour the hot agar-agar mixture little by little into the blended avocado mixture while stirring quickly so it doesn't clump, and mix until smooth and well combined.
- 7 Once the chocolate layer in the glasses has fully set, slowly pour the avocado layer on top using a spoon so the layers don't mix, filling until almost full.
- 8 Chill the pudding in the refrigerator for at least 3 hours, or until both layers are completely firm and fully set.
- 9 Before serving, whip the heavy cream until slightly thickened and pour it over the pudding as a topping. Serve chilled.
💡 Tips
• Choose avocados that are truly ripe and soft so the pudding turns out creamy and isn't bitter.
• Make sure the first layer is completely set before pouring the second layer so the colors don't mix together.
• Pour the second layer slowly using the back of a spoon touching the side of the glass for neat, clean layers.
• Store in the fridge in a covered container; this pudding will keep for up to 2 days.
