- 500g beef brisket, cut into 3cm pieces
- 6 pieces kluwek (black nut), flesh scooped out
- 1.5 liters water
- 2 stalks lemongrass, bruised
- 3 leaves kaffir lime leaves
- 2 leaves bay leaves
- 3cm galangal, bruised
- 2 tbsp cooking oil
- 8 Spice paste: shallots
- 5 cloves garlic
- 3 pieces red chilies
- 2-inch piece turmeric
- 2-inch piece ginger
- 1 tsp coriander seeds
- 1/2 tsp cumin seeds
- 1 tsp salt

- 5 Pour the sautéed spice mixture into the simmering beef broth.
- 6 Add the lemongrass, kaffir lime leaves, bay leaves, and galangal.
- 7 Cook over low heat for 1.5-2 hours until the beef is tender.
- 8 Adjust the seasoning with salt.
- 9 Serve the rawon broth with the beef in a bowl.
- 10 Add short bean sprouts, sliced salted egg, and steamed white rice.
- 11 Finish with sambal terasi (shrimp paste chili sauce) and kerupuk (Indonesian crackers).
