  • 500g beef brisket, cut into 3cm pieces
  • 6 pieces kluwek (black nut), flesh scooped out
  • 1.5 liters water
  • 2 stalks lemongrass, bruised
  • 3 leaves kaffir lime leaves
  • 2 leaves bay leaves
  • 3cm galangal, bruised
  • 2 tbsp cooking oil
  • 8 Spice paste: shallots
  • 5 cloves garlic
  • 3 pieces red chilies
  • 2-inch piece turmeric
  • 2-inch piece ginger
  • 1 tsp coriander seeds
  • 1/2 tsp cumin seeds
  • 1 tsp salt
  • to taste To serve: short bean sprouts
  • to taste salted egg
  • to taste sambal terasi (shrimp paste chili sauce)
  • to taste steamed white rice
  • to taste kerupuk (Indonesian crackers)

  1. 1 Boil the beef in boiling water, then discard the first batch of cooking water (blanching).
  2. 2 Add fresh water (1.5 liters) and boil the beef again over medium heat.
  3. 3 Sauté the spice paste until fragrant and fully cooked.
  4. 4 Add the kluwek flesh to the sautéed spices, stirring until well combined.
  5. 5 Pour the sautéed spice mixture into the simmering beef broth.
  6. 6 Add the lemongrass, kaffir lime leaves, bay leaves, and galangal.
  7. 7 Cook over low heat for 1.5-2 hours until the beef is tender.
  8. 8 Adjust the seasoning with salt.
