- 1 Chashu: heat a nonstick pan and sear the chicken thighs skin-side down until golden, about 3 minutes.
- 2 Flip and cook for 2 minutes.
- 3 Add the soy sauce, mirin, sugar, sake, garlic, and ginger.
- 4 Cook over low heat for 15 minutes, flipping occasionally, until the chicken is cooked through and glazed.
- 5 Remove from the pan and slice.
- 6 Ajitama: boil the eggs for 6.5 minutes starting from boiling water, then immediately transfer to an ice water bath.
- 7 Peel and soak in the leftover chashu sauce for 1 hour.
- 8 Broth: heat the chicken stock, then add the shoyu, mirin, sake, sesame oil, and salt.
- 9 Adjust the seasoning — it should be savory with a hint of sweetness.
- 10 Cook the noodles according to package instructions, then drain.
- 11 Arrange the noodles in a bowl and pour in the hot broth.
- 12 Arrange the toppings: chashu, halved ajitama egg, nori, green onion, corn, and sesame seeds.

• Broth made from chicken bones simmered for 2 hours is far more flavorful than instant stock.
• Boiling the eggs for 6.5 minutes gives a still-creamy yolk — don't cook them any longer.
