👩🍳 Instructions
- 1 Make the risoles wrapper: In a bowl, combine the flour, eggs, liquid milk, salt, and oil, then whisk until smooth with no lumps. Strain the batter for a silky texture and let it rest for 10 minutes.
- 2 Heat a nonstick pan over low heat, pour in one ladle of batter, and spread it thinly into a circle like a crepe. Cook briefly until set, no need to flip, then remove. Repeat until all the batter is used up; set the wrappers aside.
- 3 Make the filling: In a bowl, mix the diced sausage, mayonnaise, shredded cheese, boiled carrot, and ground pepper until well combined and creamy.
- 4 Take one wrapper, place about 1.5 tbsp of filling in the center, fold in both sides, then roll it up into a rectangle like an envelope. Press the edges to seal.
- 5 Beat the dipping eggs in a small bowl. Dip each risoles into the egg, then roll it in the breadcrumbs until evenly coated. Repeat with all the risoles.
- 6 Heat a generous amount of oil over medium heat. Fry the risoles until golden brown and crispy, turning occasionally for even cooking, about 5-7 minutes.
- 7 Remove and drain on paper towels to absorb excess oil. Serve warm, with chili sauce or extra mayonnaise on the side if you like.
💡 Tips
• You can make the wrapper a bit thicker if you want it to hold the filling more securely when rolling.
• For selling, you can bread the risoles and store them in the freezer, then fry them fresh when orders come in to keep them crispy.
• Swap the sausage filling for shredded chicken, smoked beef, or ragout for more flavor variations.
• Make sure the oil is fully heated before frying so the risoles don't soak up too much oil and stay nice and crispy.
