  • 250 grams chicken breast fillet, diced into 2 cm cubes
  • 1 ripe avocado, diced
  • 150 grams romaine lettuce, torn into pieces
  • 100 grams cherry tomatoes, halved
  • 100 grams cucumber, diced
  • 2 cloves shallot, thinly sliced
  • 100 grams plain low-fat yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp pure honey
  • 1 clove garlic, finely minced
  • 1/2 tsp salt
  • 1/4 tsp ground black pepper
  • 1/2 tsp paprika powder

👩‍🍳 Instructions

  1. 1 Marinate the chicken breast with 1/2 tsp salt, pepper, paprika powder, and half of the minced garlic for 15 minutes at room temperature.
  2. 2 Heat a non-stick pan or grill pan with a light coating of olive oil over medium heat, grill the chicken for 4-5 minutes per side until evenly cooked and browned on the surface, remove and let rest for 5 minutes before slicing.
  3. 3 Make the yogurt sauce by mixing the plain yogurt, lemon juice, the remaining minced garlic, honey, and a pinch of salt in a small bowl, stirring until the texture is creamy and smooth.
  4. 4 Arrange the romaine lettuce as a base on a serving plate, then add the cherry tomatoes, cucumber, sliced shallot, and diced avocado on top.
  5. 5 Place the warm sliced grilled chicken on top of the arranged vegetables.
  6. 6 Drizzle the salad evenly with the lemon yogurt sauce, then add a light drizzle of olive oil on top as a finishing touch.
  7. 7 Serve immediately while the chicken is still warm so the vegetables stay crisp and fresh.

💡 Tips

• Use plain Greek yogurt if you want a thicker sauce texture and higher protein content.

• Don't marinate the chicken with salt for too long, as it can make the meat tough when grilled.

• Avocado should be added last so it doesn't get mushy and keeps its fresh color.

• You can substitute turkey breast or grilled tofu for a protein variation.
