- 400 grams fresh salmon fillet, skin on
- 60 grams unsalted butter
- 1 tsp coarse sea salt
- 1/2 tsp ground black pepper
- 2 free-range chicken egg yolks
- 20 grams grated Parmesan cheese
- 2 tbsp beef or chicken bone broth (optional, for the sauce)

- 1 Take the salmon out of the fridge 15 minutes before cooking so it comes closer to room temperature; this helps it cook more evenly.
- 2 Preheat the oven to 400°F (200°C) for 10 minutes. While waiting, pat the surface of the salmon dry with a paper towel so the crust turns out crispier.
- 3 Heat a nonstick pan with ghee over medium-high heat. Sprinkle the salmon with salt and black pepper on both sides.
- 4 Place the salmon skin-side down, pressing gently for 3-4 minutes until the skin is crispy and golden brown.
- 5 Flip the salmon, add the butter to the pan, let it melt, and spoon it over the salmon for about 1 minute.
