👩🍳 Instructions
- 1 Preheat the oven to 200°C (400°F) for 10 minutes. Prepare a baking sheet and line it with parchment paper to prevent sticking.
- 2 Combine the melted butter, minced garlic, lemon juice, and grated lemon zest in a small bowl, and stir well to make the lemon butter sauce.
- 3 Place the salmon fillets in the center of the baking sheet, and arrange the asparagus around them. Drizzle the salmon and asparagus evenly with olive oil.
- 4 Pour the prepared lemon butter sauce over the salmon and asparagus. Sprinkle salt and black pepper evenly over everything.
- 5 Arrange the lemon slices on top of the salmon so the flavor soaks in while baking.
- 6 Bake for 12-15 minutes until the salmon is cooked through (it should flake easily with a fork) and the asparagus is tender yet still slightly crisp.
- 7 Remove from the oven, sprinkle with chopped parsley on top, and serve warm.
💡 Tips
• Choose salmon fillets of even thickness so they cook at the same rate as the asparagus.
• Don't overcook the salmon—take it out while the center is still slightly translucent, as it will finish cooking through as it rests briefly.
• Asparagus can be swapped for broccoli or green beans if hard to find; they're still low-carb and roast just as well.
• For an extra savory touch, add a light sprinkle of grated Parmesan cheese over the asparagus before baking.
