  • 300 grams Boneless chicken breast fillet
  • 250 grams Orange sweet potato
  • 150 grams Fresh green beans
  • 1 tsp Turmeric powder
  • 1/2 tsp Ground coriander
  • 1/2 tsp Garlic powder
  • 1/2 tsp Paprika powder (optional)
  • 1 tbsp Lime juice
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Ground black pepper
  • 200 grams Cooked brown rice or white rice

  1. 1 Preheat the oven to 200°C (400°F) for 10 minutes. Prepare a baking sheet and line it with parchment paper so nothing sticks.
  2. 2 Marinate the chicken: mix the chicken breast with turmeric powder, coriander, garlic powder, paprika powder, lime juice, 1 tbsp olive oil, salt, and pepper. Stir well and let it sit for at least 15 minutes so the flavors soak in.
  3. 3 Peel the sweet potato and cut it into 2 cm (about 3/4 inch) cubes. Toss with the remaining 1 tbsp olive oil and a little salt.
