  • 1 medium-sized fruit, coarsely grated green mango
  • 10 pieces red bird's eye chilies
  • 3 pieces curly red chilies
  • 5 shallots
  • 2 clove garlic
  • 1 small-sized fruit red tomato
  • 4 tbsp sweet soy sauce (kecap manis)
  • 1 tsp granulated sugar
  • 1/2 tsp salt
  • 1 tsp lime juice
  • 2 tbsp, for sautéing cooking oil

  1. 1 Peel the green mango and coarsely grate it using a cheese grater, or slice it into thin, long strips. Set aside.
  2. 2 Wash the bird's eye chilies, curly red chilies, shallots, garlic, and tomato thoroughly.
  3. 3 Heat the cooking oil in a skillet over medium heat, and sauté the whole shallots and garlic until softened and fragrant, about 2 minutes.
  4. 4 Add the bird's eye chilies, curly red chilies, and tomato, sautéing together with the shallots and garlic until everything is softened and cooked through, about 3-4 minutes. Remove from heat and drain.
  5. 5 Coarsely grind all the sautéed ingredients using a mortar and pestle—don't grind it too fine, so the texture still has some bite.
  6. 6 Transfer the ground sambal to a bowl, then add the grated green mango, sweet soy sauce, sugar, and salt. Mix well.
