  • 250 grams Boneless chicken breast fillet
  • 200 grams Cauliflower, cut into florets
  • 1 Carrot, thinly sliced into rounds
  • 2 stalks Green onion, sliced
  • 2 stalks Celery, sliced
  • 3 cloves Garlic, finely minced
  • 1/2 Onion, thinly sliced
  • 1 inch piece Ginger, crushed
  • 1000 ml Fat-free chicken broth
  • 1/2 tsp Salt
  • 1/4 tsp Ground pepper
  • 1 tsp Mushroom seasoning or low-sodium bouillon powder
  • 1 tbsp Olive oil, for sautéing
  • 1 Lime, juiced

👩‍🍳 Instructions

  1. 1 Boil the chicken breast fillet in the broth until cooked through and tender, about 15 minutes. Remove, shred it, and set the broth aside.
  2. 2 Heat the olive oil in another pot, then sauté the garlic, onion, and ginger until fragrant and softened.
  3. 3 Add the sautéed seasoning mixture into the reserved chicken broth and stir well.
  4. 4 Add the carrot and cook for about 5 minutes until slightly tender.
  5. 5 Add the cauliflower and cook for another 5-7 minutes until cooked through but still a bit crisp.
  6. 6 Return the shredded chicken to the broth, season with salt, pepper, and mushroom seasoning. Adjust the taste as needed.
  7. 7 Add the green onion and celery, cook briefly for 1-2 minutes until wilted, then turn off the heat.
  8. 8 Squeeze in the lime juice just before serving for a fresher aroma and taste.
  9. 9 Serve the soup warm in serving bowls.

💡 Tips

• Use homemade fat-free chicken broth to keep the calories in check; you can make it by boiling chicken bones with the fat removed.

• Don't overcook the cauliflower so its texture stays firm and its nutrients are preserved.

• For a more filling meal without adding carbs, add some boiled white tofu cubes.

• Store leftover soup in the fridge for up to 2 days and reheat before serving.
