- 500g fresh white tofu (choose the soft kind)
- Cooking oil, to taste (for deep frying)
- 500ml Marinade: water
- 3 clove garlic, minced
- 1 tbsp salt
- 1/2 tsp turmeric powder
- 3 tbsp Sweet soy sambal: sweet soy sauce (kecap manis)
- 2 bird's eye chilies, sliced
- 1 shallot, sliced
- Lime juice

👩🍳 Instructions
- 1 Cut the tofu into 3x3cm (about 1x1 inch) cubes
- 2 Mix together the water, minced garlic, salt, and turmeric for the marinade
- 3 Soak the tofu in the marinade for 15-30 minutes
- 4 Heat plenty of cooking oil in a pan for deep frying
- 5 Make sure the oil is really hot before adding the tofu
- 6 Fry the tofu until the outer skin puffs up and turns golden yellow
- 7 Don't flip it too often so the skin gets perfectly crispy
- 8 Remove from the oil and drain
- 9 Make the sweet soy sambal: mix the sweet soy sauce, sliced bird's eye chilies, shallot, and lime juice
- 10 Serve the tofu hot with the sweet soy sambal
💡 Tips
• The oil needs to be really hot so the tofu puffs up right away
• Fry in small batches so the oil temperature doesn't drop
• It's best eaten right away while still hot and crispy
