A practical version of tiramisu made in one large dish without needing an oven or any special tools, perfect for beginners who want soft, creamy results in a short amount of time. The combination of lady finger cookies dipped in strong coffee with sweet, rich mascarpone cream still delivers that authentic Italian café flavor. This chilled dessert straight from the fridge is best enjoyed slowly, paired with a warm cup of coffee.

  • 200 grams lady finger cookies (savoiardi)
  • 300 ml strong black coffee (espresso or filtered Indonesian-style coffee), room temperature
  • 2 tbsp granulated sugar for dipping coffee
  • 250 grams mascarpone cheese, room temperature
  • 200 ml heavy cream, cold
  • 80 grams powdered sugar
  • 3 egg yolks
  • 50 grams granulated sugar for egg cream
  • 2 tbsp cooled boiled water
  • 2 tbsp unsweetened cocoa powder, for dusting
  • 1/4 tsp fine salt

👩‍🍳 Instructions

  1. 1 Make the coffee dip: brew strong black coffee, mix with 2 tbsp granulated sugar, stir well, then let it cool to room temperature or lukewarm. Pour into a wide, flat dish to make dipping the cookies easier.
  2. 2 Make the egg cream (alcohol-free zabaglione): over a pot of simmering water (double boiler, low heat), whisk the egg yolks, 50 grams granulated sugar, and cooled boiled water continuously with a whisk for 5-7 minutes until thickened, pale, and forming a ribbon when the whisk is lifted. Remove from heat and let cool, stirring occasionally.
  3. 3 In a separate bowl, beat the mascarpone with the powdered sugar and salt using a mixer on low speed for 1-2 minutes until smooth and free of lumps. Add the cooled egg cream and mix well with a spatula.
  4. 4 In another bowl, whip the cold heavy cream with a mixer on high speed for 3-4 minutes until soft peaks form (firm but still soft). Gradually fold it into the mascarpone mixture, folding gently with a spatula to keep the air in, until well combined and the cream looks light and airy.
  5. 5 Dip the lady finger cookies one by one into the coffee for just 1-2 seconds per side (don't soak too long or they'll get soggy and fall apart), then arrange them snugly in a single layer at the bottom of a glass dish or 8x8-inch (20x20 cm) pan.
  6. 6 Pour half of the mascarpone cream over the layer of cookies and smooth it out with a spatula. Repeat with a second layer of coffee-dipped cookies, then pour the remaining mascarpone cream on top, smoothing the surface neatly.
  7. 7 Cover the dish with plastic wrap and refrigerate for at least 4 hours or overnight so the texture sets perfectly and the flavors soak in fully.
  8. 8 Before serving, sift cocoa powder evenly over the entire surface of the tiramisu. Slice and serve chilled straight from the fridge.

💡 Tips

• Use lady finger cookies that are slightly firm/dry so they don't fall apart too easily when dipped in coffee.

• Dip the cookies briefly (1-2 seconds) rather than soaking them, so they don't get too wet and soggy when layered.

• Make sure the mascarpone and heavy cream are truly cold before working with them so the cream doesn't split and stays firm in texture.

• The longer it chills in the fridge (overnight is best), the more the flavors will soak in and the more perfect the texture will be for slicing.
