- 4 pieces medium-sized whole wheat tortillas
- 150 grams boneless chicken breast, boiled and shredded
- 1 carrot, finely grated
- 4 leaves curly lettuce, thinly sliced
- 1/2 cucumber, seeded and grated lengthwise
- 50 grams shredded cheddar cheese
- 3 tbsp low-fat mayonnaise
- 2 tbsp plain yogurt
- 1 tbsp ketchup
- 1/4 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp ground pepper
- 1 tsp olive oil, for greasing the pan

- 1 Boil the chicken breast with a little salt until fully cooked, remove, drain, then shred finely using a fork.
- 2 Heat a non-stick pan with a bit of olive oil, sauté the shredded chicken briefly with garlic powder, salt, and pepper until well seasoned. Remove and let cool slightly.
- 3 Make the sauce by mixing the mayonnaise, plain yogurt, and ketchup in a small bowl, stir until well combined.
- 4 Warm the tortillas briefly on a hot, dry pan for 10-15 seconds on each side so they become soft and easy to roll.
- 5 Lay a tortilla on a cutting board and spread a thin, even layer of the mayo-yogurt sauce almost all the way to the edges.
- 6 Arrange the lettuce, grated carrot, and grated cucumber over one-third of the tortilla, then sprinkle the shredded chicken and grated cheese on top.
- 7 Roll the tortilla tightly and firmly starting from the filled side, pressing gently so it stays closed.
- 8 Wrap the roll in plastic wrap and chill in the refrigerator for 15 minutes so it holds its shape and is easier to slice.
- 9 Slice the tortilla roll into 4-5 pinwheel pieces using a sharp knife, then arrange neatly in a lunchbox.
