  • 2 ripe avocados
  • 200g canned tuna, drained
  • 2 tbsp Greek yogurt (mayo substitute)
  • 1 tbsp lime juice
  • 1 stalk small celery stalk, finely chopped
  • 2 tbsp sweet corn kernels
  • 1/4 shallot, finely chopped
  • 1 tbsp chopped parsley or celery leaves
  • to taste Salt and pepper
  • Paprika powder, for sprinkling
  • Sriracha (optional)

👩‍🍳 Instructions

  1. 1 Cut the avocados in half and remove the pits
  2. 2 Scoop out a little of the flesh from the center to make the hole bigger, and set it aside
  3. 3 Mix the drained tuna with the Greek yogurt
  4. 4 Add the lime juice, celery, corn, shallot, and parsley
  5. 5 Add the reserved avocado flesh and roughly mash it in
  6. 6 Season with salt and pepper
  7. 7 Mix well
  8. 8 Spoon the tuna mixture into the avocado halves
  9. 9 Sprinkle with paprika powder and sriracha if you like it spicy
  10. 10 Serve immediately
