  • 180 grams medium-protein all-purpose flour
  • 70 grams instant oats, coarsely ground
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp fine salt
  • 200 grams ripe ambon banana, mashed
  • 2 eggs
  • 250 ml full cream liquid milk
  • 60 ml pure honey
  • 50 grams unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 piece ambon banana, thinly sliced for topping
  • 2 tbsp honey for drizzling

👩‍🍳 Instructions

  1. 1 In a large bowl, combine the flour, ground oats, baking powder, baking soda, and salt. Whisk together well with a dry whisk.
  2. 2 In a separate bowl, beat the eggs, then add the mashed banana, milk, honey, melted butter, and vanilla. Stir until everything is well combined.
  3. 3 Pour the wet mixture into the dry mixture gradually, stirring gently with a spatula until the batter is just combined—don't overmix so the waffles stay tender. Let the batter rest for 10 minutes so the oats can absorb the liquid.
  4. 4 Preheat your electric waffle iron according to the manufacturer's instructions, and lightly grease it with butter or oil so the waffles don't stick.
  5. 5 Pour enough batter into the center of the iron (about 100-120 ml per waffle), close the lid, and cook for 4-5 minutes or until the indicator light turns on/steam decreases and the surface is golden brown and crispy at the edges.
  6. 6 Carefully remove the waffle using chopsticks or a wooden spatula, and place it on a wire rack so the bottom doesn't get soggy.
  7. 7 Repeat the cooking process until the batter is used up, yielding about 4-5 waffles depending on the size of your waffle iron.
  8. 8 Serve the waffles warm, topped with fresh banana slices and a drizzle of honey.

💡 Tips

• Use bananas that are very ripe (with lots of brown spots on the skin) for a stronger natural sweetness and more fragrant aroma.

• Don't open the waffle iron too quickly—wait until the steam coming out decreases so the waffles don't tear and cook evenly.

• For extra crispiness, cook 1-2 minutes longer, but watch closely so they don't burn.

• Leftover waffles can be stored in the fridge and reheated in the toaster to crisp them back up.
