Unlike the usual sweet pancakes, this savory version combines shredded potato with deliciously melted cheddar cheese. The texture is golden and crispy on the outside, yet stays soft and creamy on the inside — perfect for a filling breakfast or brunch. Served warm, these pancakes will have anyone hooked from the very first bite.

  • 3 medium-sized, peeled & coarsely grated potatoes
  • 100 grams shredded cheddar cheese
  • 2 eggs
  • 4 tbsp all-purpose flour
  • 2 stalks, thinly sliced scallions
  • 2 cloves, finely minced garlic
  • 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1/2 tsp powdered broth seasoning (optional)
  • to taste for frying cooking oil or margarine

👩‍🍳 Instructions

  1. 1 Grate the potatoes, then squeeze with your hands or a clean cloth to remove excess water. This is important so the pancakes don't turn out soggy and can get nice and crispy when cooked.
  2. 2 In a large bowl, mix the squeezed grated potato with the cheddar cheese, scallions, and minced garlic. Stir until well combined.
  3. 3 Add the eggs, flour, salt, pepper, and powdered broth seasoning. Mix all the ingredients together until you have a thick batter that can hold its shape.
  4. 4 Heat a little oil or margarine in a nonstick pan over medium heat.
  5. 5 Scoop 2-3 tablespoons of batter onto the pan, then flatten slightly into a round shape about 1 cm (roughly 1/2 inch) thick.
  6. 6 Cook for about 3-4 minutes until the bottom is golden brown and crispy, then flip and cook the other side until evenly done and the cheese inside has melted perfectly.
  7. 7 Remove from the pan and drain briefly on paper towels to remove excess oil. Repeat until all the batter is used up.
  8. 8 Serve while warm, optionally topped with a sprinkle of scallions or a little extra shredded cheese.

💡 Tips

• Make sure to squeeze the potatoes really well until dry so the pancakes don't turn out soggy and can crisp up perfectly.

• Use medium-low heat so the inside cooks through without burning the outside.

• You can add chopped smoked beef or sweet corn kernels for a flavor variation.

• Serve immediately after cooking, as the crispy texture is best enjoyed while still warm.
