- 1 Combine the ground meat with the grated onion (squeezed to remove excess liquid), garlic, red pepper paste, sumac, cumin, paprika, chili flakes, salt, and pepper
- 2 Knead firmly for 5 minutes until the mixture becomes sticky and well combined — this is important so it will stick to the skewers
- 3 Cover and let rest in the refrigerator for at least 1 hour
- 4 Wet your hands, then take a handful of the meat mixture
- 5 Shape it lengthwise around the kebab skewer, pressing firmly to pack it on
- 6 Heat a grill or grill pan over high heat
- 7 Grill the kebabs for 3-4 minutes per side until charred and cooked through
- 8 Serve over pita bread with sliced onion, grilled tomato, and grilled chili peppers
- 9 Add a squeeze of lemon and serve yogurt on the side

• The meat must be kneaded firmly and for a good while so the proteins bind together and stick to the skewers
• Squeeze the grated onion until dry so the mixture isn't too wet
