- 150 grams fusilli pasta or whole wheat macaroni
- 1 can (185 grams) canned tuna in water (drained)
- 1 ripe avocado, diced
- 10 cherry tomatoes, halved
- 1 cucumber, finely diced
- 100 grams sweet corn kernels (boiled or canned works fine)
- 2 clove shallots, thinly sliced
- 2 tbsp chopped cilantro or parsley
- 3 tbsp plain unsweetened yogurt
- 1 tbsp low-fat mayonnaise
- 1 tbsp lemon juice
- 1 tbsp olive oil
- 0.5 tsp salt
- 0.25 tsp ground black pepper
- 0.25 tsp garlic powder

- 1 Boil the pasta in salted boiling water according to the package instructions until al dente. Drain, then rinse with cold water to stop it from cooking further and prevent sticking. Set aside.
- 2 While the pasta cools, make the dressing by mixing the yogurt, mayonnaise, lemon juice, olive oil, salt, black pepper, and garlic powder in a small bowl. Stir until well combined.
- 3 In a large bowl, combine the cooled pasta with the flaked tuna, cherry tomatoes, cucumber, sweet corn, and sliced shallots.
- 4 Pour the dressing over the pasta mixture and gently toss until everything is evenly coated, being careful not to break up the pasta.
- 5 Finally, fold in the diced avocado and chopped cilantro/parsley, stirring very gently so the avocado doesn't get mashed. Adjust the seasoning if needed.
- 6 Transfer to an airtight lunchbox container and refrigerate overnight. If you'd like the avocado to stay extra fresh the next day, you can also dice it and add it fresh right before heading to work.
