👩🍳 Instructions
- 1 Coat the chicken breast with paprika powder, garlic powder, salt, black pepper, lemon juice, and 1 tbsp of olive oil. Let it sit for at least 15 minutes so the seasoning soaks in.
- 2 Heat the remaining olive oil in a nonstick pan over medium heat. Grill the chicken for about 5-6 minutes on each side until cooked through and browned on the surface. Remove, let rest briefly, then slice thinly.
- 3 Prepare a tortilla and lay it on a cutting board or flat plate. Spread 1.5 tbsp of hummus evenly in the center of the tortilla, leaving about a 2 cm (¾-inch) border around the edges.
- 4 Arrange the lettuce, sliced grilled chicken, tomato, cucumber, grated carrot, and cheddar cheese over the hummus in a line down the center of the tortilla.
- 5 Fold both the left and right sides of the tortilla inward, then roll tightly from the bottom up to form a compact wrap.
- 6 Cut the wrap diagonally in half using a sharp knife so the filling looks nice and it's easier to eat.
- 7 Wrap in plastic wrap or aluminum foil and store in a lunchbox. It can be kept in the fridge overnight to bring the next day.
💡 Tips
• Use whole wheat tortillas to make your lunch more filling and fiber-rich, perfect for a healthy diet menu.
• Wrap it as tightly as possible and pack the sauce/hummus separately if you want to store it for more than 1 day so the tortilla doesn't get soggy.
• You can swap the chicken for sliced boiled eggs or grilled tofu for a vegetarian lunch variation.
• For best results, store the sliced wrap in an airtight lunchbox and keep it separate from moist ingredients like cucumber if you're making it a day ahead.
