Melon bingsu is another version of the refreshing Korean shaved ice dessert, featuring finely shaved milk ice as soft as snow paired with juicy, sweet melon chunks. This cold, soft, and lightly sweet combination makes a great relaxed dessert on a scorching afternoon. It looks beautiful and is super easy to make at home without needing any expensive special equipment.

  • 500 ml full cream liquid milk
  • 3 tbsp sweetened condensed milk (white)
  • 1/2 ripe melon
  • 2 tbsp granulated sugar
  • 2 tbsp water
  • 2 tbsp (for sprinkling, optional) powdered milk
  • to taste shaved ice

👩‍🍳 Instructions

  1. 1 Mix the liquid milk and sweetened condensed milk in a container, stirring until well combined. Pour into an ice cube tray or a flat container, then freeze for at least 6 hours or overnight until completely solid.
  2. 2 While waiting, cut half of the melon into small cubes and set aside in the fridge to keep it cold and fresh.
  3. 3 Take the remaining melon and blend it smooth together with the granulated sugar and water until it becomes a smooth melon sauce. Store in the fridge.
  4. 4 Once the milk ice is completely frozen solid, take it out and shave it using an ice shaving machine (bingsu maker) or a coarse ice grater until it turns into fine, snow-like flakes.
  5. 5 Arrange the shaved milk ice in a serving bowl, shaping it into a mound so it looks nice and pretty.
  6. 6 Drizzle with the prepared melon sauce, then sprinkle the fresh melon cubes on top.
  7. 7 Sprinkle a little powdered milk on top for extra aroma and creamy flavor, then serve immediately while cold.

💡 Tips

• Make sure the milk is completely frozen solid for at least 6 hours so the shaved result is fine and doesn't clump together.

• If you don't have an ice shaving machine, you can use a food processor with a dull blade or a manual ice shaver.

• Choose melon that's truly ripe and sweet so the sauce and fruit chunks taste their best.

• You can add other toppings like grated cheese or chopped almonds for a flavor variation.
