These little round bites combine the natural sweetness of dates with the rich flavor of roasted almonds and warm cinnamon aroma, without a single drop of added sugar. The texture is chewy and dense with a bit of crunch from the chopped almond coating, making it a perfect energy snack for any time of day. The process is super practical and requires no oven — just blend and roll into balls.

  • 200 grams Medjool dates, pitted
  • 120 grams unsalted roasted almonds
  • 30 grams desiccated coconut
  • 1 tsp ground cinnamon
  • 1/4 tsp fine salt
  • 2 tbsp water
  • 30 grams roughly chopped almonds, for coating

👩‍🍳 Instructions

  1. 1 Soak the dates in warm water for 10 minutes if they're firm, then drain and pat dry with a paper towel.
  2. 2 Add the roasted almonds to a food processor and process for 20-30 seconds until they form coarse crumbs (don't let them turn into an oily paste).
  3. 3 Add the dates, desiccated coconut, ground cinnamon, and salt into the same food processor.
  4. 4 Process all the ingredients for 1-2 minutes, scraping down the sides occasionally, adding water 1 tbsp at a time until the mixture comes together and can be shaped (not too sticky to the touch).
  5. 5 Check the texture by taking a small amount of the mixture and pressing it with your finger; if it holds together easily without crumbling, it's ready to shape.
  6. 6 Take about 1 heaping tbsp of the mixture and roll it between your palms into a ball about the size of a meatball (roughly 3 cm/1.2 inches in diameter).
  7. 7 Roll each ball over the chopped almonds until evenly coated, pressing gently so they stick.
  8. 8 Arrange the date almond balls in an airtight container lined with parchment paper, then refrigerate for at least 30 minutes to firm up the texture before serving.

💡 Tips

• Choose moist, plump dates like Medjool so the mixture comes together easily without needing much water.

• Don't process the almonds for too long, as they can release oil and turn into a paste-like texture.

• Store in the refrigerator for up to 1 week, or in the freezer for up to 1 month in an airtight container.

• You can swap the almonds for cashews or walnuts according to your preference without changing the preparation method.
