- 1 Make the palm sugar syrup: simmer the palm sugar with 100ml water and the pandan leaf until dissolved
- 2 Stir until slightly thickened, then strain and let cool
- 3 Cook the thin coconut milk with a pinch of salt over low heat, making sure it doesn't come to a boil
- 4 Let the coconut milk cool
- 5 Cut the green grass jelly into cubes or coarsely shred it
- 6 Put the grass jelly into a glass
- 7 Pour in the palm sugar syrup
- 8 Add the coconut milk
- 9 Add ice cubes to taste
- 10 Stir gently and serve cold
💡 Tips
• Good-quality grass jelly should be chewy in texture and not easily fall apart
• Don't make the coconut milk too thick, so the drink doesn't feel too heavy or greasy
• It's even more refreshing if you chill it in the fridge before serving
