👩🍳 Instructions
- 1 Prepare a square 6x6-inch (15x15 cm) or 7x7-inch (18x18 cm) baking pan, and line it with plastic wrap or baking paper, covering all sides so the fudge will be easy to remove later.
- 2 Cut the dark cooking chocolate into small pieces so it melts quickly. Set aside.
- 3 Prepare a pot with water and heat over low heat until the water is warm (do not let it come to a full boil). Place a heatproof bowl on top to create a double boiler.
- 4 Add the chopped chocolate, butter, and peanut butter into the bowl set over the double boiler. Stir slowly and continuously until everything melts completely and combines into a smooth, glossy mixture.
- 5 Once melted, remove the bowl from the pot. Add the sweetened condensed milk, salt, and vanilla powder. Stir until fully combined and the mixture is thick and glossy.
- 6 Add the chopped peanuts to the mixture and stir with a spatula until the peanuts are evenly distributed throughout.
- 7 Pour the fudge mixture into the prepared pan. Smooth the surface with a spatula or the back of a spoon until even and firmly packed.
- 8 Sprinkle the chopped almonds over the surface, pressing lightly so they stick well.
- 9 Cover the pan with plastic wrap, then place it in the refrigerator and let it chill for at least 3-4 hours, or until the fudge is completely firm and fully set.
- 10 Once set, lift the fudge out of the pan using the lining as a handle. Cut into small squares to your liking, using a knife that's been slightly warmed for clean, neat cuts.
- 11 Store any leftover fudge in an airtight container in the refrigerator, ready to serve anytime.
💡 Tips
• Use good-quality dark cooking chocolate, since the chocolate flavor is the key to how delicious this fudge turns out.
• Make sure the water in the double boiler isn't too hot or boiling, as this can cause the chocolate to seize and turn grainy.
• If you like a sweet-and-savory combo, try adding some crushed potato chips or pretzels for a crunchy contrast in texture.
• Store in the freezer if you want the fudge to last longer, and let it sit out for 5-10 minutes before serving so the texture is just right.
