Golden sunrise — a golden-orange drink rich in beta-carotene and vitamin A, perfect to drink every morning to support eye health, skin, and your immune system! Carrots are the easiest and most concentrated source of beta-carotene — a single glass of carrot juice already provides 200% of your daily vitamin A needs, which are essential for night vision, skin cell regeneration, and the health of the respiratory tract's mucous membranes as the body's first line of defense against pathogens. Papaya contains vitamin A, C, and E all at once — a rare antioxidant trifecta in a single fruit — plus the enzyme papain, which supports gut health and reduces inflammation. Lime boosts beta-carotene absorption since vitamin C helps convert beta-carotene into active vitamin A in the body. Coconut oil or other healthy fats are highly recommended to consume alongside this drink, since beta-carotene is a fat-soluble vitamin that needs fat for optimal absorption. Ginger adds warmth, a thermogenic effect, and anti-inflammatory properties that round out the overall benefits of this drink.

  • 3 large carrots, washed clean
  • 200g ripe orange papaya, cut into pieces
  • 2 sweet oranges, juiced
  • 1 lime, juiced
  • 1 inch piece fresh ginger (2cm)
  • 1/2 tsp turmeric powder or 1 inch piece fresh turmeric
  • 1 tsp honey
  • 200ml coconut water

👩‍🍳 Instructions

  1. 1 Wash the carrots with a vegetable brush, peeling if needed
  2. 2 Cut the carrots into small pieces
  3. 3 Peel and cut the papaya
  4. 4 Put the carrots and ginger through the juicer first, and collect the juice
  5. 5 Or if using a blender: add the carrots, ginger, and coconut water, and blend on high
  6. 6 Add the papaya to the blender along with the carrot juice
  7. 7 Add the sweet orange juice and lime juice
  8. 8 Add the turmeric, honey, and a pinch of black pepper
  9. 9 Blend until completely smooth and creamy
  10. 10 Strain if desired, or leave it full of fiber
  11. 11 Pour into a tall glass with ice cubes
  12. 12 Sprinkle a little turmeric powder on top for color and garnish
  13. 13 Serve immediately while fresh

💡 Tips

• Beta-carotene is a fat-soluble vitamin — enjoy it with healthy fatty foods like avocado or nuts for optimal absorption

• A deeper orange color indicates a higher beta-carotene content — choose the brightest-colored carrots and papaya you can find

• Don't take high-dose vitamin A supplements at the same time as this juice — an overdose of vitamin A from supplements can be dangerous, even though it's safe from natural sources
