  • 3 whole large red tomatoes, diced
  • 1 whole cucumber, cut into thick half-moons
  • 1 whole green bell pepper, thinly sliced into rings
  • 1 whole shallot, thinly sliced
  • 100 grams black olives (kalamata olives), whole
  • 150 grams feta cheese, cut into blocks/slices
  • 4 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar (alcohol-free) or apple cider vinegar
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp ground black pepper

  1. 1 Wash all the vegetables thoroughly. Cut the tomatoes into large dice, the cucumber into fairly thick half-moons, and the green bell pepper into thin rings.
  2. 2 Thinly slice the shallot, then soak it briefly in ice water to reduce its sharpness and make it crisper. Drain.
  3. 3 Arrange the tomatoes, cucumber, bell pepper, and shallot in a large serving bowl. Toss gently until well combined.
  4. 4 Sprinkle the black olives on top, then place a large chunk of feta cheese in the center or on top of the salad (no need to crumble it — leave it whole, as is traditional for authentic Horiatiki).
  5. 5 Drizzle the extra virgin olive oil and red wine vinegar evenly over the entire surface of the salad.
  6. 6 Sprinkle with dried oregano, salt, and black pepper. Serve immediately while fresh, optionally with warm pita bread on the side.
