- 2 tbsp coarse ground robusta or arabica coffee
- 200 ml boiling hot water
- 1-2 tbsp granulated sugar or shaved palm sugar
- 1 small inch piece ginger, smashed
- 1 small stick cinnamon stick
- 2 pieces cloves
- 1 leaf pandan leaf (optional)

- 1 Boil the water together with the ginger, cinnamon stick, cloves, and pandan leaf for 5 minutes until the spices release their aroma.
- 2 Prepare a heatproof glass or cup, then add the ground coffee and sugar.
- 3 Strain the hot spiced water, then slowly pour it into the glass containing the coffee and sugar.
- 4 Stir briefly just to dissolve the sugarโdon't stir too long, so the coffee grounds can settle to the bottom.
- 5 Let it sit for 2-3 minutes until the coffee grounds sink to the bottom.
- 6 Serve while warm, and sip it slowly without stirring up the settled grounds.
๐ก Tips
โข Use coarsely ground coffee made specifically for tubruk-style brewing so the grounds settle easily and the coffee isn't too bitter.
โข The water must be truly at a rolling boil (around 95-100ยฐC/203-212ยฐF) so the coffee's aroma comes through fully.
โข Don't drink all the way to the bottom of the glassโleave a little behind, since that's the coffee sediment.
โข For a richer flavor, add a bit of sweetened condensed milk at the end after the coffee has been brewed.
