  • 100g fresh spinach (washed clean)
  • 150g all-purpose flour
  • 1 tsp baking powder
  • 2 eggs
  • 80 ml milk
  • 60 ml cooking oil or olive oil
  • 80 g shredded cheddar cheese
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp garlic powder

  1. 1 Blend the spinach with the milk until smooth — it will turn into a green liquid
  2. 2 Mix the flour, baking powder, salt, pepper, and garlic powder
  3. 3 In a separate bowl, beat the eggs, then add the spinach liquid and oil
  4. 4 Pour the wet mixture into the dry mixture and fold until just combined (don't overmix)
  5. 5 Add 3/4 of the shredded cheese and mix well
  6. 6 Spoon the batter into a muffin tin lined with paper liners, filling each about 3/4 full
  7. 7 Sprinkle the remaining cheese on top
  8. 8 Bake at 180°C (350°F) for 20-22 minutes, until a toothpick comes out clean

• Don't overmix the batter — just stir until the flour is moistened; a few lumps are totally fine
