- 300g rice
- 400ml thin coconut milk
- 1 tsp turmeric powder
- 1 leaf bay leaf
- 1 stalk lemongrass, smashed
- 2 leaves kaffir lime leaves
- 1/2 tsp salt
- Side dishes: 2 pieces fried chicken (drumsticks)
- 2 pindang eggs (spiced simmered eggs)
- Potato sambal: 2 potatoes, diced and fried + 2 red chilies + fried shallots
- Serundeng (spiced toasted coconut)
- Shrimp crackers
- Sliced cucumber and tomato

👩🍳 Instructions
- 1 Wash the rice and put it into the rice cooker
- 2 Pour in the coconut milk, then add the turmeric and salt
- 3 Place the bay leaf, lemongrass, and kaffir lime leaves on top of the rice
- 4 Cook as usual in the rice cooker
- 5 Once cooked, gently stir and remove the leaves
- 6 Prepare the fried chicken — you can use leftover fried chicken from the day before
- 7 Pindang eggs: boil the eggs in water + sweet soy sauce + garlic for 15 minutes
- 8 Potato sambal: fry the potatoes, grind the chilies + shallots, then mix with the potatoes
- 9 Arrange the turmeric rice in the lunchbox, then arrange the side dishes around it
- 10 Add the crackers, sliced cucumber, and tomato
💡 Tips
• Use thin coconut milk so the rice isn't too heavy — use 1 packet of instant coconut milk plus water
• Turmeric powder is more practical than fresh turmeric and gives a more stable color
• The side dishes can be cooked the night before and stored in the fridge
• Keep the crackers separate in a ziplock bag so they stay crispy
