- 4 pieces white tofu, coarsely crumbled
- 200g oyster mushrooms, shredded into small pieces
- 4 sheets banana leaves for wrapping
- 2 stalks green onion, sliced
- 2 pieces red chili, sliced
- 1 piece green chili, sliced
- 5 Ground spice paste: shallots
- 3 clove garlic
- 3 pieces bird's eye chili
- 1 inch piece turmeric
- 1 tsp coriander seeds
- 1 tsp salt
- 1/2 tsp sugar
- 1 stalk lemongrass, finely sliced
- 2 leaves bay leaves
- 3 leaves kaffir lime leaves

👩🍳 Instructions
- 1 Sauté the ground spice paste briefly until fragrant, then remove from heat and let cool
- 2 Mix the crumbled tofu with the shredded mushrooms
- 3 Add the sautéed spice paste, green onion, sliced chilies, lemongrass, bay leaves, and kaffir lime leaves
- 4 Stir well and adjust the seasoning to taste
- 5 Wilt the banana leaves briefly over a flame
- 6 Take one sheet of banana leaf and add 2-3 tbsp of the mixture
- 7 Wrap neatly and secure with a toothpick
- 8 Steam for 30 minutes over medium heat
- 9 Once cooked, serve immediately, or grill briefly over hot coals for extra flavor
💡 Tips
• Wilt the banana leaves first so they don't tear when you wrap the parcels
• You can grill them briefly after steaming to give them a smoky aroma
• Great served with warm steamed rice and sambal
