  • 500 grams Cilembu sweet potatoes
  • 1 piece, finely grated carrot
  • 2 stalks, thinly sliced scallions
  • 3 cloves, finely minced garlic
  • 3 tbsp, roughly crushed fried shallots
  • 1 egg chicken egg
  • 3 tbsp cornstarch
  • 1 tsp salt
  • 1 tsp powdered chicken bouillon
  • 1/2 tsp ground black pepper
  • 1/4 tsp granulated sugar
  • 2 tbsp, for brushing olive oil or cooking oil
  • 100 grams grated cheddar cheese
  • 150 ml full-cream liquid milk
  • 5 pieces, blended smooth red bird's eye chilies
  • 1 tbsp margarine
  • 1 tsp all-purpose flour

👩‍🍳 Instructions

  1. 1 Steam the peeled and cut Cilembu sweet potatoes for 20-25 minutes until tender. Remove and mash while still warm using a fork or wire strainer until smooth and lump-free.
  2. 2 Combine the mashed sweet potato with the grated carrot, scallions, minced garlic, and fried shallots. Mix well.
  3. 3 Add the egg, cornstarch, salt, bouillon powder, pepper, and sugar. Knead gently until the dough can be shaped and no longer sticks to your hands. If it's still sticky, add a bit more cornstarch.
  4. 4 Shape the dough into flat rounds about the size of a quail egg, and place them on a baking sheet lined with parchment paper.
  5. 5 Preheat the oven to 180°C (350°F). Lightly brush the surface of the patties with olive oil so they turn golden brown and don't dry out.
  6. 6 Bake for 25-30 minutes, flipping once halfway through, until both sides are golden brown and slightly crispy on the outside.
  7. 7 While waiting, make the cheese sauce: melt the margarine in a small saucepan, add the flour, and stir quickly until foamy. Pour in the milk little by little while continuously stirring to prevent lumps.
  8. 8 Add the grated cheese and blended chilies, and keep stirring over low heat until the cheese melts and the sauce thickens and becomes smooth. Adjust the seasoning to taste, then remove from heat.

• Choose Cilembu sweet potatoes that are fully ripe (the skin is slightly wrinkled) so they're at their sweetest and you won't need to add much extra sugar.

• The cheese sauce is best made close to serving time, as it will thicken and firm up if left sitting too long; if needed, add a little hot milk to loosen it back up.
