  • 1 fruit large pomegranate, seeds removed
  • 100g fresh cherries or frozen tart cherries
  • 50g small red beet, peeled and cut
  • 1 fruit red apple, cut
  • 1 tbsp food-grade rose water
  • Juice of 1/2 lemon
  • 1 tsp manuka honey
  • 200ml coconut water
  • Ice cubes
  • Pomegranate seeds and dried rose petals for garnish

👩‍🍳 Instructions

  1. 1 Cut the pomegranate in half and remove all the seeds by tapping the outside firmly over a large bowl of water
  2. 2 Peel and cut the beet into very small pieces so it blends easily
  3. 3 Put the pomegranate seeds, beet, cherries, and apple into a blender
  4. 4 Add the coconut water and blend on high until everything is completely smooth
  5. 5 Add the lemon juice and honey
  6. 6 Strain through cheesecloth or a fine strainer to get a clean juice free of beet pulp
  7. 7 Add the rose water at the very end, after straining — don't blend it in, since rose water's aroma fades very easily
  8. 8 Stir gently with a spoon
  9. 9 Pour into a wine glass or tall glass filled with ice
  10. 10 Sprinkle fresh pomegranate seeds on top and garnish with one or two dried rose petals on the surface
  11. 11 Serve cold and sip slowly

💡 Tips

• Raw beets provide more active betalain pigments than cooked beets — always use fresh raw beet in the juice

• Rose water must be food-grade or culinary-grade — cosmetic rose water is not safe to drink

• Pomegranates with the deepest red seeds contain the highest levels of punicalagin — choose pomegranates with dark red flesh
