  • 250 grams kefalotyri cheese or halloumi cheese
  • 3 tbsp all-purpose flour
  • 3 tbsp olive oil
  • 1 fresh lemon
  • 1/2 tsp dried oregano
  • 1/4 tsp ground black pepper
  • 1 tbsp water

  1. 1 Cut the cheese into slices about 1.5 cm (roughly 1/2 inch) thick, shaping them into squares or rounds as you like.
  2. 2 Moisten both sides of the cheese slices with a little water, then coat them evenly all over with flour. Pat gently so the flour sticks well without leaving excess.
  3. 3 Heat the olive oil in a non-stick skillet over medium heat.
  4. 4 Fry the cheese for 1-2 minutes on one side until golden brown and crispy — don't overdo it, or the inside will melt out.
